Vegetable Biryani

Ingredients

  • 100g FinnWave basmati rice
  • 2 tbsp vegetable oil
  • 1 large onion, sliced
  • 170g diced carrots
  • 200g bite-sized cauliflower pieces
  • 2 tbsp curry powder
  • 1 cinnamon stick
  • 1 tsp cumin seeds
  • 1 tbsp ginger finely choped
  • 2 finely chopped garlic cloves
  • 160g plain yogurt
  • 2 tsp vegetable stock powder
  • 30g unsalted roasted cashews
  • 150g frozen peas
  • finely chopped mint as desired
  • finely chopped fresh coriander as desired

METHOD :

STEP 1

Cook the rice in a pan of boiling water for 12 mins until half cooked. Drain, but retain the water. Heat the oil and fry the onions in a large non stick-pan over a medium heat until golden.

STEP 2

Add carrots and cauliflower, cover the pan and cook for 5 mins. Mix in the curry powder, cumin seeds, cinnamon stick, grated ginger and garlic. Mix well. Add rice, and 2 tbsp of yogurt and tip in 300ml of the retained rice water mixed with the bouillon powder. Add the cashews and peas. Cover with a lid and cook over a gentle heat for 10 mins until all the liquid is absorbed and rice is tender. Mix half of the coriander and half of the mint, leave to rest for 5 mins before serving.

TIP

Make raita by stirring mint and coriander into the yogurt, add 1 tbsp cold water to loosen, grind with a hand blender to make green raita. Serve alongside the biryani.

Chinese Egg Fried Rice

Ingredients

  • 1 cup rice
  • 1 medium carrot
  • 2 green Onions
  • 1 capsicum
  • 1/2 teaspoon Chinese salt
  • 2 tsp soy sauce
  • 1/2 teaspoon black pepper powder
  • 4 tbsp oil

METHOD :

  • 1. In a pan add water, rice and salt, place on stove for boiling, when cooked drain water.
  • 2. Fry chopped onions in heated oil in a pan until they turn light brown in colour.
  • 3. Beat eggs in a bowl, add salt, black pepper, Chinese salt and whisk again
  • 4. Pour beaten eggs to browned onions and mix.
  • 5. Once eggs are cooked, add chopped green onions and soy sauce.
  • 6. Add capsicum, carrots and cook on high heat.
  • 7. Once carrot liquid becomes dry, add salt, black pepper, Chinese salt and mix well.
  • 8. Add boiled rice and mix well.
  • 9. Sprinkle green onions leaves and simmer at low heat for 10 minutes.
  • 10. Garnish with diced green onions and serve.
TIP

Egg fried rice is a quick dish that can be prepared within 30 minutes. This dish can also be made with leftover rice
